Using old fence post as smoke stack

I have a Barrell grill that I am starting to make mods to. It was given to me homemade and did not have any smoke stacks on it. I use this for high heat grilling and not smoking. The welding class at the school I work is going to cut the holes to put two small smoke stacks on top. Anybody ever...

    Thin Spare Ribs

I won a hog in a raffle a few months. One pack of very thin spare ribs came with it. Any tips on how to cook these? Figure if I cooked them like normal would turn them into jerkey.

    What to do with these?

Winn-Dixie had these on sale. I have two packs of chuck roast, these are thin and cutup like country style ribs. Not a lot of fat on them. My first thought is to smoke them for a about a hour then slice up and sauce for a appetizer. Anybody got any suggestions?

What is everybody cooking for the first college football Saturday? I'm thinking of going with wings and smoked bacon wrapped meatballs, and of course beer. Happy Football Season

Planning on pulling the larger one at 190 to rest in foil for about an hour before slicing, will pull the smaller one at 190 to cut...

Need some ideas on easy smokes

There's a outdoor festival and camping event two weeks from now. Buddy of mine is bringing his smoker, he is going to cook one day and I am going to cook the next. He has a box style electric smoker where you can set the temp so we don't have to tend to the fire all day. He is doing ribs so...

    First Spatchcock chicken

All the talk about rib, brisket and butt everywhere (I like em as much as the next guy). Spatched chicken has to be one of the most under rated smoking recipes out there. It's easy, it doesnt take all day and it damn good.

    Does anybody use just wood?

My father in law has a lot of oak and cherry wood piled up in his shed. Has been stored high and dry for awhile so should burn pretty easy. Thinking instead  of using lump charcoal and wood chunks, use charcoal to start the fire and then go nothing but wood logs the rest of the way. Anybody...

    Too cold to smoke??

When I lived in West Virginia it was a challenge but can be done. Just have to maintain the right temp in the smoker.
