    I am surrounded by white birch trees, literally. It seems that white birch trees grow like weeds in the left over culm/waste from processing hard coal here in North East Pennsylvania. I am going to cut some and season it for next years smoke season. I never thought of removing the bark.

    Thanks for the insight...I will figure a little less than 1/2lb per person, do a few fatties and some chicken 1/4s that I'll smoke then seperste into thighs and legs. I've seen these guys in action...eating free food....they could be a biblical 8th plague. :)

    quick question

    The ribs are all smoked (yesterday) for about 3 hrs. They'll finish up in the oven for 2hrs. the fatties and chicken are on the smoker now and I decided to do 4 small salmon fillets. They'll go on around 11:30ish.The MAIN course, THE BEER, has been on ice since 8am.
