    Wow, I wrote the thread, gathered the pics and previewed it last night but guess I forgot to post. It was late and I was tired. Here are a few pics of the brisket right before it went into the foil to finish up as well as the country style ribs going on the smoker.

    I really don't time mine. However, I use the 1 lb. sausage rolls and cook them about 3 hours or so at about 250-275. I wait until it gets a really nice dark brown color on the outside and then I consider it done.
