The last couple briskets that I smoked, I removed the point prior to cooking. This allowed the meat to come to temperature a little faster & I was able to prep & cook the burnt end a little longer while the flat was still in the smoker. It worked great.

Bearmoe, Welcome to the site. I'm from the Buffalo area as well. (Lancaster) The cold does make smoking a little more challenging, but I'm planning to smoke 15# of pork ribs tomorrow.
You will definately still have juice. The first time that I finished in the oven I was doing 4 pork butts & I didn't put anything under the butts to catch the juice. Boy, did my wife enjoy cleaning up that mess!!!
