    Didn't go so well

I have a Char Griller smoker with the side fire box. I have had great success with this smoker. My last pork shoulder was okay but the bark was really bitter. I use coals in the side fire box, but I have real trouble keeping the heat up. This last time I tried burning some red oak with the...

    Help with brisket

I did a 12 pounder last weekend. I had first smoke at 8:30 and by noon I was at 165. I reached 198 when I took it off, and that was at 4:30. I failed to mention that this was my first attempt with this cut of meat, and my smoker. I followed the simple instructions provided here, and it...

    First Brisket

Folks I am a little concerned. First smoke at 8:30. It is now noon and I already have a temp of 165. I should still take it off at 195. I intend to slice it. I am using a probe type gage that is only 6 inches long. Could not find anything better on short notice.

    First Brisket

Smoke. We have smoke. My first attempt has began. I didn't put it in a pan and now I am wondering just how am I going to wrap this thing at 170 degrees? First time for everything I guess. How long does it take to smoke a typical brisket of about 10 lbs?

    First Brisket

Two questions. Where do you find lump coal? Do I build the fire in the side box or the main body?

I have a Chargriller rig with the side fire box. I will try my first brisket this weekend. I need a sure fire success method. How long per pound? What type of fuel? And, anything else you can think of. Thanks.

    Fuel?

I have a CharGriller grill/smoker with the side fire box. There website at www.chargriller.com/tips.html number 12 recommends logs for fuel. I live in Pueblo, Colorado and hickory trees are not plentiful here. Are logs really needed? I can from time to time get my hands on some good sized...

My wife got me that smoker for Christmas and she agrees with you. I know but with work, kids, wife, dogs, cats, shooting and reloading, playoff hockey, trying to get in a little fishing and drinking. Life in progress issues you know. I will do my best to be worthy.

    Howdy..

Like many I have been grilling for many years. I have had a bullet style electric smoker for about 3 years. I have got blackened catfish nailed on that smoker. My BBQ and smoking interests mainly are in the Memphis style. Wifes family hails from Jackson, Tennessee so I have been infected by...

    Newbie

My first post here. Please be gentle. I have a Chargriller with the side fire box. The manufacturer recommends whole logs. They are quite specific when stating that chunks, chips, and coals will not provide the heat required. Go to www.chargriller.com/tips.html for the details. Number 12...
