I just hit 3K on my fishing web site after 5 years... Thousands of posts it is a big deal. And from what I have read, you have creative and relevant ideas and info to share. Thanks and congratulations. I look forward to learning more and eventually sharing advice instead of asking basic...

    First smoke ever..not relaxing!

Those blurry pics look like when I dug into my first home-made smoked product two months ago... all I saw was a blur. It was embarrassing.

    Why the water pan?

No doubt, I will hang in there. I have done jerky, and plenty of it. Smoking seems to be an ethereal art form. Basically moisture retention, opposed to dehydration. I have just discovered the search engine on this site actually works. Unlike the fishing and astronomy sites I belong to...

    Why the water pan?

This site obviously has a much better search engine than I am used to. I have bookmarked the link and will do my homework.

    Why the water pan?

Heat sink makes sense. Maybe I should just keep the door shut longer. I've been at this for two months and fish is my game. So to speak. I can make jerky, but, I want moist smoked fish. I have discovered that low temps is your friend when it comes to fish. but smoke is slow to come at low...

    Boiling your brine

Brine recipes list ingredients and amounts of them, but often fail to describe how to bring them to full potential. Are concepts such as pan toasting aromatics, like tarragon and coriander, or bringing a brine containing bay leaves to a boil to release the full flavors  just assumed?

Hello All... my name is Glenn

I'm in Imperial Beach, CA. The most Southwesterly City in the Continental U.S. Pacific Ocean on the West, Mexico on the South. The absolute SW Corner of the 48 States. The City of San Diego is 12 freeway minutes North. WaHoo... the 60mph screaming hookup that nightmares are made of. ... My...

What wood to use for building a raised outdoor container bed

I used Cedar fence boards to build 12"w x 18"h x 36"long boxes for my mom. 10 of them. Expected them to last a couple of years. They finally failed at eight years. Cost about $16 and 1 hour each. No chemicals. Just some yellow wood glue and drywall screws.   Years of dill, coriander, sage...

Hello All... my name is Glenn

Hi everyone, My name is Glenn. My Brother-in-Law received a smoker for Christmas. He was indifferent to the contraption.  I have been stuffing it full of everything I can find ever since. I am an avid fisherman, competent home cook and professional sign/font designer. I imagine the...
