    My first fattie

I was about to ask the same question. Interesting design. The coals go around the outside on the bottom? BTW the fatty looks awesome. Some tortilla's and it's on like a pot of neck bones.

Going to make my first fatty tonight. Question?

It was outstanding Jerry. I have to get my mods in on the smoker and then make a one piece expanded metal grate for the smoker as the tin foil side of the bacon didn't crisp the way I would have liked. The bacon and the veggies really made the meat moist and everything held together nicely...

    Who built my Smoker?

I'm a newbie myself but from the looks of that smoker, the wheels and the stack it reminds me of an old Lyfe Tyme smoker. I looked hard at buying one about ten years ago and decided it simply would be to hard to control the temperature in it. *edit* I think the older ones only had one door on...

    Fig tree wood

I had a huge Fig tree that I pruned way down this fall. I cut what I could into small enough to fit in the wood box of the horizontal smoker. Has anyone ever used fig wood and if so how did it turn out. I'm thinking of trying it as soon as it cures.

    Salt Free Ribs

I have cut way back on my salt intake but truthfully there are still certain foods I just can't eat without it. In my mind it's like making a beautiful turkey sandwich with fat free mayo. I get what you're saying though and would imagine you could come up with some good rubs to make up for the...
