Need some help with doing a Christmas Ham -
I have several/multiple questions:
1. A Christmas ham is the shank portion of a picnic ham?
2. Do you buy them uncooked/unsmoked? (I've read the thread on Bear's Twice Smoked Hams)
3. If uncooked, should they be brined? If so for how long...
My smoker lid leaks...
I got the 3/4 inch Grapho Glass rope..
I also have the Rutland HiTemp Silicone.
It's a barrel, reverse flow.
Question: Are there any concerns running this around the entire door?
Looked at some older threads and some people indicate to not put the rope in a place...

Basic info, it is not a Lang... Barrel is roughly 60" x 24"

I agree with Wolfmann, keep it at a low temp.
I go straight from the brine onto the smoker....I do try and let it drip out, and give it a good shake before it goes on the smoker...but it goes straight to heat.
For me, I don't oil or rub the skin. It ends up being sacrificial...in my opinion...
