    Well, I ran most of the wiring in my garage...I know for a fact that the "camper" plug in has a 30amp, 125v circuit breaker in the basement..and appropriate wiring run to the garage recepticle.  Also, garage plug ins are all 20 amp, 120vac breakers, with appropriate wiring as well.

    sorry...guess I could have stated more info.  MOST of my circuits are 20 amp....in this case, I have a 20 amp circuit available, I also have a dedicated 30 amp, 120vac circuit as well.  I'd love to utilize the 30 amp plug in..I assume since it's still 120v, I could run any 120v controller just...

    what size wsm?  I was EASILY getting 18 hour burns outta my 18.5 when I had one..I don't think I ever had to add charcoal on anything I ever cooked on there.

I got the one with remote control, so I can check temp of grill and food in the house, and adjust it too. It Smokes, BBQ's and cooks very very nicely.  I do jerky as well, but I do have an old MES...

    SO all you MES owners..I still have my OLD MES sitting here in my shop, gathering dust.  Have any of you put a NEW heating element in it, and controlled it with a PID...so basically you are just using the MES box and adding your own internals.  My old heating element, and controller died years...

    Thanks..I may give your recipe a try....This last batch I did 5 lbs of sliced venison..and it was a bit HOT..not bad, just a tad on the too hot side..but my kids still enjoyed it, and all 5 pounds were gone 2 days after drying.  Anyway, will give your recipe a shot. Dan

    I like pretty much smoking anything, but deer ribs are pretty tough to "get right".....they way we do them best is to boil them, to get a ton of that nasty, stick to the roof of your mouth, fat and tallow out, and then we put them in a pressure cooker and cook them that way..they come out fall...
