    Sourdough Bread

    I'm getting back into sourdough baking after a hiatus of about 15 years. Got my starter going last week. Plan on discarding and feeding for about a month before doing any bread. I do use my discard for making pancakes and waffles.

    I experimented with notifying nominated members. When the final decision was made and they weren't selected, it led to hurt feelings and demands for an explanation as to why. That said, I did it once to see how it would work and it didn't!

    Dutch's "Wicked Baked Beans"

    Jack, I'll smoke the trimmings off of the ribs and smoke them along side the pan of beans. About 2 hours in, I'll dice the meat and stir it into the beans. I feel that smoking the trimming for a couple of hour imparts a more smokey flavor to the beans. YMMV
