I don't think the pan has anything to do with lack of smoke. I have used a pan for Boston Butt and beef brisket, both with good results. Using my ThermoPro thermometer I have found my MES30 actual temperature to be 20 to 25 degrees cooler than what is indicated on the control. By cranking the...
Just finished making (and eating) some of these and made half with cream cheese and half with cheddar (nothing else added to the cheese). Only used a half strip of thin bacon on each and it was plenty. Put them in smoker for a little over an hour at actual temp of 250 degrees (the highest my...
I used your recipe to go with my first attempt at smoking brisket on the 4th of July, Independence Day, and it came out great. As others have said, they are even better the next day. I subbed Sweet Baby Ray's barbeque sauce for the ketchup.and cut the brown sugar to 3/4 cup and thought they...
I did not. I used another recipe on here, but will try yours some other time. The main reason is that I had no smoked meat on hand. I would generally have some frozen pulled pork, but it was so good that it did not last long. LOL That, the pulled pork, had been the product of my first attempt...
Bear, I am doing my second smoke with my MES30 (brisket this time) and now that I have a good digital thermometer (ThermPro TP-20) I see that when my MES temp guage says 240, the actual temp (with probe hanging just above the meat) is only about 220. So I am doing what you suggested here and...
My first attempt at cooking with my new MES30 was pulled pork using a Boston Butt. It came out great basically following Bearcarver's guidelines. Now I want to cook a brisket like you did. What did you use for a rub? I just used mustard pepper and salt on the Boston Butt.
Update: Eight (8) hours into my first smoke experience with MES 30 and have tried everything, but not satisfied with amount of smoke and hate the continuous fooling with chips, so I have decided, apparently like the majority of others on here, to bite the bullet and buy the A-MAZ-N box which...
I am new to this also, so perhaps a more experienced owner would be more help, but this is my "two bits". When I pre-seasoned mine, I initially had a problem with the Weber chips I was using notburning much at 275, but when I adjusted the top vent (I think I closed it down almost shut) they...
I am a newbie with MES 30 and having no problem with smoke. Using Weber hickory wood chips and top vent nearly closed. You might try starting at highest temp (275) to get the chips burning good and then adjust temp down to desired cooking temp.
