You won't regret it they are wonderful. I just smoked 5 fatties last night and they turned out great, held 225 for over 5 hours with the charcoal basket half full
It is very similar to the wsm. The minion method is what I use, before I did the mod to my charcoal basket I could get about 4-7 depending on weather, after I did the mods I can get 8-10 hour.
I'd say give bargain outfitters a call and see how many they have in stock. They are discontinued so whatever they have in stock is what's out there. I don't know any stores that have them, sorry.

I used lump charcoal just filled the pan and kinda stacked it up on the sides then did 7 kingsford briquets to get everything up and running it stayed at 240 for almost 8 hours
That looks great I need to make my charcoal basket bigger as well plus I need to drill some holes for my cable barrels(Thanks Bronx, I actually work at a large cable company and never even thought of using a barrel) but those will have to wait another day got a roast and a fatty tomorrow...

Hello all, noob here from Everett, WA been a cook for 7 years but Smoking is so much different so I'm learning just got a Charbroil double chef h2o smoker so this is going to be a busy weekend. I've learned lots just looking around can't wait to really start smoking it up.
