    Sunday Bird

I've heard of beer-butt chicken but never had it before... hope to try it soon. I also here that it tastes good with Dr. Pepper instead of beer so I'll experiment.

    Howdy from Texas

Thanks to you guys, my first smoke in years was a success. Their are some things I will probably do different next time. For example, instead of smoking the brisket on the day of the get-together I will cook it on the day before. The brisket fell apart as I cut it and some suggested...

    Smoking drumsticks

Thanks everybody, you guys are great! Maybe I got ahead of myself and should have asked first. Since the drumsticks are brined (because they were going to be smoked), are they ruined? I will not put them in the smoker; I will throw them on the grill instead.

    Smoking drumsticks

All I found at the store was drumsticks, no leg quarters. I had read that brining is recomended for chicken, so I got some drumsticks bathing in it right now. I had one question, but now after reading a different post I have 2 questions: I have about 30 drumsticks and I don't know how long...

    Supreme court Ruled

Here in TX we have CHL's (concealed handgun license), but thousands are not happy with that. Within a week more than 10,000 have signed a petition to make TX an open carry state. See the vid here for more info or you can even sign the petition if your one of the states listed...

Keep brisket in smoker or put it in oven after wrapping?

Wow, thanks for the quick replies! I never thought about letting the meat sit so that the juices redistribute... do you have to reheat it or does it stay warm enough to serve after it sits there for an hour?

Keep brisket in smoker or put it in oven after wrapping?

In the past I used a dry rub on a brisket and let it sit for a few hours. I would then sear it and put it in the smoker. After 2 hours or so of smoking I would wrap it in aluminum foil a few times and make sure the fat side is on top so as it melts it keeps the bottom moist. Then I flip...
