    Chicken Thighs

    Brine your thighs for at least 4 hours.  Pat dry and apply rub.  Put thighs in the Traeger on smoke for (180) 30 minutes.  At 30 minutes, apply sauce or mop and crank Traeger to high.  Cook for another 40-45 minutes or until desired internal temp is reached.  For me this has resulted in a nice...

    Traeger Spikes

    Anyone have trouble with huge temp swings in their Traeger?  I set the temp for 225, which to this point means fluctuations between 220-300.  It will spike and crash, but not spend the majority of the time at the magical 225 I am looking for.  Anyone have a mod if they have seen the same thing? ...

    Trager owners - have you cold smoked?

    I recently acquired a traeger and want to cold smoke this winter when the temps drop. Where in the traeger did you position the AMNPS and cheese? Looking forward to your reply and/or anyone else who has used the AMNPS in a Traeger.
