does anybody ever smoke soft cheeses? like the specialty cheeses that you buy at the grocery store(Ingles).
it seems to me that it would be easy to smoke-you would just have to make sure that it does not get dried out to much.

Smoking cheese in a ECB or other bullet smoker is really easy once you get the hang of it. first soak your hickory over night-you want maxumum smoke but mimum heat.

I have been fooling around and smoking varoius types of cheese. ONe thang that i have wanted to try smoking for a while is chevre. We raise dairy goats and make a lot of cheese. Does anybody have any experance smoking chevre? I have seen goat cheese that is rolled in ash and it is REALLY GOOD...
I have smoked two turkeys using this brine and it has turned out excellent. Every body in the family was begging me to smoke another. I am going to fire up my old char-broil and smoke another for a new years eve party/skeet shoot.

Becuase of charcol costing so dawggone much I am going to try to just use wood. The two predominate woods in my area are hickory and oak. They are both strong woods, I was wondering if used just 10 pounds of charcol and then added plenty of hickory would the flavor be to strong? I though about...
