I wish that our store had beef ribs with that much meat on them. All they have is frozen ribs that look like they have been through a meat scrapper. You see bare bones, with only a very little amount of meat in between the bones. NONE on top. Needless to say, I have never bought them!

Well, we bought some point cuts on sale at $1.49 per pound. One of them was cooked immediately for an early corned beef and cabbage. The others went into the freezer to turn into pastrami later on this month.

My main use for eye of round is to turn them into corned beef. We prefer the very lean corned beef.
OTOH, we buy ready corned beef flats or points from brisket to turn into pastrami.
Just a reminder -- this is the time of year when corned beed tends to go on sale. Remember to pick up some extras so that you can turn them into pastrami.
