    I have used mango for years...no one and I mean no one has gotten sick. Most of the people that are senstitive to mango are sensitive to the skin of the fruit.

    There is mango all over the place down here try that. I have friends that use A Pine and I don't like it...but they usually use it for wild pig.

    Look into the wood your using, you said it was seasoned for a year or two?? Seams a little old to me for some milder woods.

    Any fruit wood is good for smoking. I use a lot of orange.

    Nice start, what are you using for a rub???? I like to brine wings then smoke. And like Indy said Poltry needs to go below the other meats.

    What you sprey with or mop with is a personal preference, play with diffrent things and find what suites you and the people that eat your Q. My preference is apple juice and Jack Daniels and sometimes a little coca cola, whatever floats your boat.

    Keep some kind of table close to your smoker, saves lots of problems that arise.
