I'm from idaho. Harvest lots of wild game each year. Now its time to learn how to smoke and prepare meat. I've made jerky oven and (little chief) , stuffed alot of sausage.. But am ready to make the good stuff. Just don't know a darn thing!!??? Most stuff i have smoked??? Well I way over...
I built and am in the process of seasoning one of them. Mines not as high tech but have got the temp dialed in I think. I have 15 pounds of elk jerky cureing for my first smoke tommorrow. I'll take some pictures. i am just useing the high mountain blend. (Hickory) 200 for 2 hours... It works...
