      I am a car dealer that smokes meat regularly for charity and have developed a reputation for smoking meat. We are considering giving away either ribs or pork loin to those that purchase “smokin hot desls.” The meat would be frozen and vacuumed sealed.

      How to safely freeze the meat. I have looked into flash chillers or freezers. Is that overkill? How big a risk are smoked meats? Thanks I’m advance!
