Just Found The Best Tool For Scrubbing MES Racks

Just had a service call on the new Profile dishwasher for a clogged drain. Got it done under warranty. It wasn't from the racks, but general clean up. Soak and scrub will always be the last part of the fun.

Just Found The Best Tool For Scrubbing MES Racks

After letting them soak overnight, I used a Barbeque scrubber on them. These are about $4 at HD and have a synthetic Brillo on one side and a stainless brush on the other. There is also a scraper on there. This made for the easiest clean up ever.

    The Foil Thing

Half my life traveling takes me regularly to places like Jack Stack in Kansas City, Corky's in Memphis, Smitty's in Panama City. You get the idea. It's a long list. None of my favorite BBQ places use foil and they do get the best results. 5:30am   2 Briskets in the brand new MES 40. ( Oh Yeah...

How much wood to add in MES 40"

In the begining, I had some trouble with too much smoke and creosote in my MES. 2, 3, or 4 chips at a time depending on the size does it. You don't need to see it billowing smoke to be doing the job. The MES is very effecient and much depends on how well your door seal works.

    MES Fire

Wow, That is going to take some cleaning. I'm going to come up with a mod to keep the grease from dripping into the chip box. Maybe foil, maybe a a hood made from a coffee can. I like the idea of the grease getting out of the smoker through the drain, while smoking.

    MES Fire

The MES is pretty level and drains good. I have never used the pan, just the tray that feeds the drain.

    MES Fire

The photo of the burner with the tray pulled shows a bit of charred grease ganging down from the top into the tray area. It looks like it went down the front and into the tray there.

    MES Fire

Here are a couple photos of the MES fire aftermath. The grease tray had already been removed and cleaned. This happened about half way through the smoke with the MES chock full of ribs. There were six half racks on each rack. The ribs were not too fatty. I would say they were on the lean side of...

    MES.... hot corner!

I'll bet you a quarter that you had a little fire going on back there. This is a MES problem with greasy stuff and a good reason for foil over the burner / chip box area. When you get in there cleaning, you'll see more evidence of a small fire back in the corner. I've been there recently too...

    MES Smoker Questions

If the MES has not reached target temp, raising the target temp shouldn't change the element cycling interval. Just give it an hour to preheat before loading. This is not a high dollar unit. The thermoprobes probably vary from batch to batch. If the door had 2 latches, maybe the seal would be...

    MES Smoker Questions

240 Is a little high (imho). How about 210' - 220'. It's about slow cooking, and turning cuts of meat that used to be undesireable and cheap into delicious meals. I lived in Europe for many years. Our butcher used to laugh at us paying 50 cents a pound for his garbage when we bought freshly...

    MES Smoker Questions

Don't worry about it. Forgetabout it. It's going to be great. Just don't use too many chips. The MES is rediculously effecient on smoke and you can get too much smoke and worse yet creosote. There is always going to be temperature stratification. The cool air enters through gaps in the door...
