I don't use any probes on big stuff like brisket and pork butt. I will use on in a turkey breast. I just use an instant read for everything and check at certain times or when the meat feels a certain way.
Get a over thermometer to sit on the grate so you know your cooking at the proper temp then as others have said when you pull on the bone it will slide out when ready.
