    Andouille with QView

Wife has a strict no livestock policy :( The fat content of the cat would make a good sausage though.

    Andouille with QView

I used 1 Tbsp of dry instead of 1 Tbsp Fresh Thyme leaves, chopped as the recipe called for. Failed to realize that the dry would be much more powerful. BTW: I live in Lincoln and can see the stadium from my house. Thanks for the vinegar tip ardvark. Will try it on the 2nd batch.

    Andouille with QView

Sorry to glom on your post pantherfan Just figured since this thread way my inspiration I would share. Got the sausage temp up to 160 (5 over 155 by not watching) They looked pretty awesome. Single barrel smoker rinsed them off hung them to dry with a fan blowing cooked one up in...

    Andouille with QView

Good call DINGLE I kinda learned that last weekend when I uber oversmoked some ribs and chicken. Pic was taken right after closing the lid with a fresh addition of lump and wood chunks. I was trying to get an uber smoke at the end while I got it up to 155. Will I get unwanted flavors from...

    Who here doesn't foil?

Googled around and cayenne is acidic. FYI.

    Who here doesn't foil?

Alton Brown is my fave food network show. He has helped me a bunch. Only thing I can think of being acidic would be the cayenne and the apple juice (apple juice was used during smoking, not before). I guess will use cling wrap as a barrier from now on. I cut off all the metalized bits. I...

    Who here doesn't foil?

Strange cuz I was heading over here to ask a Q about foil. I did some ribs this weekend (3rd time using the smoker) and decided to try the 2-2-1 on two of my three slabs. Turned out to be more of a 3-2-.75 though. The one in the middle did not get foil and the two outside ones got foil and...

beerorkid: used a bullet, bought a barrel smoker a neighbor made

Well got a chicken and a brisket under the belt. It was my first time with the smoker and had to figure out how to use. Started friday evening by burning the smoker out with some briquette charcoal. Some over on the smoked meat forum saw the paint on the inside and said I should burn it...

beerorkid: used a bullet, bought a barrel smoker a neighbor made

Had to search around for the smoky okie method. Found it on the google http://www.recipezaar.com/207187 I will try that one day for sure. I did not put the brisket in the freezer cuz I am going to go for it. 6 pounder. Not sure what the red is, I would think primer as well. Right after work...

beerorkid: used a bullet, bought a barrel smoker a neighbor made

You know that was one of my concerns. I do not know what paint he used. Maybe a good burn will burn that off. Might be high temp stuff, but it should not be there. Gonna go out and pick up some lump charcoal and get to know it, but rock it for a while and burn it all off. It was his old...

    Omaha Smokers...Large Green Egg Smoker

The guy from www.hollenbeckfarms.com has one of those when he hits the farmers markets and grills up burgers at a fair price. The meat he sells is amazing, although a bit pricey for a noob learning to smoke meat ;) Seems more like a grill to me. he uses lump charcoal in it.

beerorkid: used a bullet, bought a barrel smoker a neighbor made

Good idea on the seal. I guess i will be able to see how much leaks out when I fire it up tomorrow. Brewed at a local brewpub that changed ownership once. Was Crane River, now Misty's. 9 barrel system with 4 fermenters and 14 grundy tanks we served out of. Was a pretty cool gig and all the...

beerorkid: used a bullet, bought a barrel smoker a neighbor made

Howdy. Pretty much a noob here. I have been using a brinkman bullet that I got at an auction over the years, but really only used it 5 times or so. Have had good luck, but want to get better. A guy down the street has been making some smokers and selling them off his lawn. The barrels...
