    Thank you all very much. I think I have figured out what our problem is. We are using hickory and I think the flavor of the hickory is just too strong. I also think we are using to large of a bird anf I will go with a smaller one. I have never brined the turkey and will try that this time also...

Everytime he smokes a turkey it has a really strong smokey flavor on the outer layer of meat but nothing in the center. We usually do an 18 pound turkey. He usually only smokes it for an hour or so.
