    I've done this a couple of times, came out wonderful. Lightly coat the fish with sugar, then kosher salt. Then sprinkle over whatever herbs I could get out of the garden: oregano and rosemary mostly, plus a few slices of lemon. place in a cookie sheet with sides, then cover with plastic wrap...

    This was my first attempt at jerky. Used a recipe from Alton Brown on FoodTv - was pretty good http://www.foodnetwork.com/food/reci..._29310,00.html Used almost all pecan wood, with a bit of hardwood charcoal.

    I'd like to try cold smoking fish as well. The temp has to be much lower though to be safe - right? About 40 degrees F? Anyone tried an old refrigerator, on that still functions. Punch a hole through it and generate the smoke on the outside? Read somewhere that a soldering iron in wood...

    How do you recognize the creosite? I certainly have a heavy residue inside my smoking cabinet - which is flaking off in some places. Is that creosite?

    Left off my salmon - have done about 60 lbs of Sockeye salmon so far - what an absolutely wonderfuly thing. Am definitely trying to figure out how to get bulk, wild salmon though - is a bit expensive...
