I found beef short ribs and pork ribs... the one store I shop at does "NOT" sell enhanced ribs.... Way cool....
So, here they are.... 30% off too!!!
Short ribs and pork ribs.... seasoned and smoking...
That's my plate... 1 short rib, 2 pork ribs, and one heaping helping of Brides version of
"Easy Asian Pasta Salad"
I am totally convinced beef ribs are my favorite meat to smoke and eat... The pork ribs were good, very good.....
Now that I am using Eric's wet-to-dry smoking method, the meat comes out really moist... the pork ribs did not pull back....
They were tender, fall off the bone tender... maybe it's Eric's fault....
Bride's version:
8 oz Rose Brand Chinese egg noodles;
1 tsp olive oil;
6 Tbs soy sauce;
1/4 C white sugar;
3 Tbs rice vinegar;
1 Tbs toasted sesame seeds;
2 tsp Sambal or garlic chili paste;
1 tsp sesame oil;
2 green onions chopped;
1 red bell pepper chopped;
1 C combined,chopped cabbage and salad shrimp
(I'm looking at the recipe and thinking.... A few drops of Red Boat fish sauce may have been the "over the top"
addition to this..or a smooshed anchovy..... just thinking out loud...)
Boil the noodles "partially cooked" in salted water.... you want them about 90% cooked.... transfer to a bowl and mix with the olive oil...
Beat together soy, sugar, vinegar, sesame seeds, chili paste and sesame oil until sugar has dissolved....
Mix that concoction with the pasta.... add the veggies, shrimp and what ever else you choose.... mix....
Refer overnight for best flavor mingling.... mix before serving.. Serve chilled....
That is one light delicious salad... goes perfect with ribs .....
