So did you have to wait until the coals got screaming hot after the smoke was done ? I know my coals don't seem hot enough for a sear when I lift the pot off... My thinking is the steak will cool down to much by the time the coals are hot enough... what says you ?

Keith i know what you're saying... i had the the smoker on for about 45 minutes before i through the steaks on so there were enough that were hot and when i pulled the pot i just seared over those coals.   It seared really fast... but i know what you mean that these things are just so efficient that not many coals get going.

....and my arm HURTS BIG TIME!    lol,  Keith (also)
