The filet mignon was only smoked for about an hour. I didn't want to smoke it too far. The smoke was very light which is perfect for filet mignon. As you can see, the dinner turned out AMAZING!!! Filet Mignon, Lyonnaise Potatoes and Green Beans.

Next time, I think I'll smoke the potatoes, too. I did that for the beef stew and they turned out great!

at what temp (IT/OT) did you cook it?
I smoked it at the lowest temp I could. Around 265. Once the juices started to pool up, and put it on the direct flames to sear it and build a crust with the juices.
