Another noob here. I have been working with four “smokeheads” for the last couple of years. Last part of the week they are talking about what they are going to smoke, and the first part of the week they are eating stuff they smoked last weekend. It always smells awesome and occasionally they share a little with me. Wednesday the food ads come out and sale candidates for smoking are discussed. I have been trying to line up a smoker for over a year now. Christmas 2011 I thought I would be getting one but a large HD tv for the family pushed my smoker down the priority list. I have asked many questions and studied a lot of internet sites (especially this one!) Finally last Sunday my wife and I carried home a MB XL gasser from a nearby Bass Pro. I am lining up hi temp rtv for the door, a new thermometer and a cast iron skillet for the chip pan as first mods.Then I will fire her up for seasoning. Then my first burn hopefully this Sunday. Probably chicken, ribs and maybe a pork butt. Corn and some baked potatos and maybe some beans. I am so looking forward to it. I will be cooking in North Texas near Dallas.
