As of right now it's been on for 3.5 hours at 240F in my MES40.

Brine over night in water, salt, sugar, lemons, and rosemary. Dried with paper towel and lightly coated skin with olive oil and bbq rub.

 
Mesquite and apple. About half and half of each. It's starting to really golden and crisp up right now, more pictures within an hour or two when it's done.

Currently at 145F.
 
I always wonder why people think turkey is only for thanksgiving and requires a huge meal. One of my favorites is Smoked turkey salad with big chunks of turkey, or sliced smoked turkey sandwichs.

Turkey looks great! I did the same thing two weeks ago. Dang what is the minium required time period before having another one is....LOL!

BTW with turkey I actually use some cranberry juice in the pan

Man that looks good, nothing better than smoked turkey. BBQ'ers Delight has some pellets (dont know if you use pellets) that are herb flavored just for poultery and they also help in the flavor.

Amen. I make a whole turkey or a couple whole chickens about once a week because it's so easy and economical. Since making the turkey I've had turkey salads, turkey fajitas, turkey sandwiches, turkey omelets, and the two wings I tossed in wing sauce for a snack.
 
Nice!  Turkey is a favorite, and that one looks like a complete success.
