This was high heat smoking, more like baking with TBS. I lit the Kamado Kooker with Stubb's briquettes and one chunk of cherry.

Put the heat deflector in place for indirect cooking, set up the maverick ET732, and started prepping the chicken. I seasoned the breasts with Jeff's naked rub and placed some harvarti cheese that I smoked on 3/5/13 on top, then layered some asparagus spears on top of the cheese, folded the breasts over and toothpicked, then sprinkled on a little more rub.

Kamado Kooker is holding steady at 425° so on with the show. Stuffed chicken and a couple skewers of brussel sprouts seasoned with EVOO, kosher salt, and CBP.

About 15 minutes in and we are getting close. Chicken is at 140° IT and I give the brussel sprouts a turn.

Plated with a spring mix salad ...

Thanks Kat! It was actually last nights dinner, had to watch the season finale of "The Following" last night, so I didn't get it posted until today. Brussel sprouts and asparagus are two of my favorite things to put on the grill. I gave the grill a night off tonight and made oven baked dry rubbed salmon on a bed of sautéed kale.
 
Toby...that is one delicious healthy dinner my friend!  The salmon as well.  Looks great!  

I'm going to copy your brussel sprout skewer method...usually we just cook them int he basket cut in half.

The Following....Love that show!  Especially when the wife gets scared and jumps in my lap..wink wink.   Hope you enjoyed the ending...just read Fox renewed it for another season. 
 
How were the sprouts? I've never smoked those yet and I love em charred up and crispy.

They were mostly just charred and crispy, lol. The whole cook was only 20 minutes so they really didn't take on much smoke. I love them on the grill, favorite way to eat them.

Have been trying to cook healthier. I started a MLM company with a wellness product around Valentine's Day and have lost 51 lbs as of this morning.

No problem, I skewer them because it makes it easier to flip them over. I put them in a zip lock bag with EVOO, salt, and CBP and give them a good shake. Then microwave in the bag for about 3 minutes before skewering. This way you don't end up with sprouts that are crispy on the outside and cold and hard in the center.

Cool, it will be interesting to see where they go with the storyline.
