Hi All Any one have a recipe or information about Thuringer Bratwurst. Had one the other day, was really good like the bratwurst I used to have in Germany.Would like to try and make my own..I do do see them for sale already made on the net..

If you want thuringer style brats, just use a medium grind and leave out the culture & dextrose. This would give you a fresh sausage. If you wish to add cure then thats your call.
 
Hi I was thinking more of the taste then texture of the Bratwurst

I have cumin,corirander, marjoram,allspice, so I not too far off.

The Len Poli and Wedlinydomowe recipes are for Thuringer cervelat, which is similar to a summer sausage, real German Thuringer bratwurst is something entirely different, it's a grilled sausage seasoned with marjoram, pepper, caraway and garlic.

Once again Martin is right on.  It will almost always have eggs and sometimes milk.  This is also a very fatty sausage, usually 60-65% lean

If you are looking to buy some, Stiglmeier Sausage Co in Wheeling IL sells them.  But I still like making them better myself.  I agree with the Germany trip was over there last fall, can't wait to get back.
 
Hi AVmott  I was stationed in Germany for 2 years with Army many years ago. Got too taste the bratwurst at that time,. Would like to make my own, so far I haven't had much luck. Tried afew of the premix stuff, wasn't happy with the results.
