I had 3 sticks of bologna in the freezer that i took out to smoke I put them in the fridge to thaw and forgot about them, today is day 3 of being in the fridge. Are they still good? I have the correct amount of #1 cure in it but I wasn't sure beings I froze them before smoking them

So it sounds like you made them stuffed and then froze them right away? How long before they were frozen?  I was under the impression that the cure did do its work in very low temps? Maybe someone else can chime in and give a better answer.  It sounds like there are a few variable we still need to give an informed answer.

The cure will quit working once temperature gets down to around 28* F

Nate85 how long was it till you froze the bologna?

We stuffed it then froze it maybe at most 2 hours before I had it in the freezer
