Anybody have any recipes or suggestions with rumaki?

Chicken livers  wrapped with bacon... I would like to smoke them. Any thoughts?
 
No recipe, but it sounds good. I would just season it with your favorite rub. Or maybe make an ABT with the liver & some cheddar cheese for the stuffing & wrapped in bacon.

take chicken liver clean the fat ,dip in boiling water for few second ,cut in half remove the Green inner, roll in black pepper garlic powder cumin roll with bacon and fry it .

if you want to smoke it. Pre fry the bacon and smoke it 250 for 30 minutes or till liver is Raddy remember over cook liver taste Terrible.

thanks africanmeat that was super helpful!  i was searching for a way to smoke livers.  i'll have bacon for breakfast ... wrap the chicken livers ... if i can save some of the bacon ... smoke them for an appetizer and then put in my turkey.  i think i will have some happy guests.

i have a gallon baggie of rabbit liver in the freezer ... i'll try it on those and post how they come out.  they're quite a bit bigger so maybe i would go an hour on them.

i guess i won't really be able to call mine rumaki ... just chicken livers wrapped in bacon.  i love bacon and liver so the water chestnuts will be one less step for me to deal with.  i also thought of loading the chicken livers into portobello mushrooms and laying the bacon on top and then smoking.  we'll see what i end up doing.  i'll try to get pics to post.

The liver will be done quick quick and the porteblo need more time it will be a problem.
