Hello Smoking Meat Forum,

          I am SCIowasmoker or you can call me Larry. I live in south central Iowa, Chariton, and I am a smoker newbie. I was given a never been used smoker (Mr Meat Smoker) by a customer of mine whose husband had passed away before ever getting to use it. I hope with this forum's help and guidance I can honor Jack's memory and use this smoker to make all sorts of great smoked dishes. I am no stranger to the kitchen and love cooking. Like I said in the title, I will ask a million and one questions on here and hope I don't become that " Oh no..... not him again!!!!" guy here at the forum. Question number one,,, is it OK to refer to the forum as SMF? Told you, I would ask a lot of questions.

Anyway, I am already impressed as I did a search for 'chicken leg quarters' and got almost 500 recipes. Wow !!!! I knew I was in the right place for learning about smoking and preparing great dishes for my family. Thanks to TulsaJeff for the warm welcome and I will hopefully get to know most of you here at SMF..

Now back to my chicken recipes....

  I really have to thank my son-in-law for steering me to this site. Now, I have another question.... Is there a link to this 5 day E-coarse? I really like loading my guns before taking on a new adventure.

OK, Here I go with more questions.... I mixed up a batch of brine solution for some chicken leg quarters (recipe posted by Tip Piper of Hillbilly Vittles) and I followed the recipe which made a LOT more then I needed.... Now,,,,,,, will this brine solution keep and for how long and under what conditions??
