I couldn't be more excited about this smoker.  I already have Todd's AMPS, and have been using it for quite a while on a different smoker, but obviously that baby's made for a MES.

It's currently seasoning and I'm running a full AMPS load through it.  I tried putting in some soaked chips right off the bat, but once it got up to temperature, they caught fire.  That kind of angers me, because you should be able to use it just like it says on in the instructions, but...we all know that won't get you the right kind of smoke anyhow.

Anyhow, while I spend most of my time lurking, and not nearly as much posting, since it's a new gadget, you will likely be seeing more of me...
 
Welcome, let's see what you got! That's a mighty dangerous combo there. Same thing I have and smoking turned easy all of a sudden.

That's what I like to hear! :)  I did quite a bit of research before opening my wallet, but I'm excited to dig in, and most certainly learn some from all of you.

Oh, and don't tell anyone, but...the intro I wrote back in 2009, about being from KC, as my first post on SMF?  It no longer applies. :(  Due to a job offer I couldn't refuse, now I live in South Texas.  There isn't a "world class Q joint" within 1000 miles of here! :) (I haven't made it up to Franklin's, though, so that might change my mind)

Thanks for the tips and tricks--I'm ready to bring a little more KCBBQ to the coastal bend.

An AMNPS and MES make a great combination. It is what I have and use. However, the chip tray on the MES works OK too to get TBS and without fire, if you use it correctly. Don't know why you got fire, but perhaps you put too many chips in the tray at one time or had the feeder or chip tray ajar letting in too much air get to the chip tray. Doesn't much matter if you only use the AMNPS, but I sometimes find it handy to use the MES chip tray for shorter smokes or mixing in other wood types along with what is in the AMNPS .

Welcome! A MES and a AMNPS is an awesome combo IMHO. you're gonna love it!! The AMNPS does not at all compare to using chips. The difference in the flavor of your food is huge!
