Tomorrow I am taking on pork side ribs for the first time. My plan is as follows and I am looking for some advice from the good folks on SMF...

Rub the ribs with home made rub and put into fridge overnight

Smoke ribs using sand, charcoal and hickory wood chips starting at 11am the next day

Temp at "ideal" setting as my internal thermometer does not have numbers

Smoke time of 6.5 hours as I have 6.62 lbs of ribs

"Rest" in foil for 30 min prior to supper time

Remove from foil, sauce and grill for 10 min

Enjoy at 630 pm...

Any advice is appreciated

Go Smoke Go!

Depending on how you like your ribs, you can't go wrong with 3-2-1.

3 hours smoke, 2 hours foiled, 1 hour back on the grate to firm up. I usually do 2.5-1-30 minutes. But I like a firmer rib. This is all assuming 225˚.

Good luck!!

Well all smoked and eaten! Not bad for a first try thanks to my brinkman and you fellas. Next time need more rub and perhaps less resting time.
