My oldest grandson (6 yo) in Ohio says he wants elk jerky for Easter instead of candy. He and my 5 yo granddaughter in WVA had the same request at Halloween. So I made them 3 lbs (finished weight) of spicy sweet elk jerky. I know it won't be enough so I'll have to make some more next week.

Didn't think to get any pics of the process, but I do have finished jerky pics.

No I don't get to do that because I am here in CO and they live in OH and WVA, but sure love the boxes from me!
I hope you hide your jerky and all for the G-kids to hunt for! 


Thanks Sam. No dehydrator, these were done on MES 40. I have really worked at getting it to where I want the texture and flavor by only using the smoker, even though I do use Hi Mountain Seasonings. This is spicy sweet for waterfowl from Hi Country. So now I'm working on sausage sticks!

Yep I'll bet you could...LOL this cow elk was huge. I had nearly 200 lbs boneless meat when I finished processing her. I took 4x3 mule deer buck during black powder and he's gone!

That reminds me of my childhood growing up in western Washington.  My Dad used to make elk jerky every fall to clean the freezer for hunting season.  It's been twenty five years since we moved to the Midwest and that is still one of my fondest childhood memories.  Your grandkids are lucky.
