It is a little expensive to get started but Homemade is Awesome...Speaking of name brands, the only thing Hillshire Farms Polska Kielbasa and Real Homemade Kielbasa has in common, is....THE SHAPE!...

Hi Richard

You can get started pretty cheap.  You can purchase ground pork and beef from the butcher so you don't need a grinder.  You can purchase all your spices and even some cures at just about any grocery store so you don't need to spend lots of bucks on shipping bulk spices.   And if you really want to start small you can delay purchasing a stuffer by either making patty sausages or using a funnel or stuffing horn and casing from your butcher.  I don't recommend the funnel route, it can be pretty aggravating but it is doable and can't get much cheaper.   I understand wanting to keep the investment down until you are sure that you will be doing it again.

ShooterRick has a good breakfast sausage posted in the forum that you can simply form into patties and fry.  Other members have posted recipes for sausages that require neither cures nor casings that are easy to follow and very delicious.

Give it a try, we're here to offer any advice you may or may  not want!  Like others have said though, once you get started you just can't stop.

Oh btw,  we make Andouie sausage down here by simply cubing the meats with a sharp knife and then stuffing into casings.

Good luck, I look forward to your first qview stuffing sausages

Yes Rich, Home made sausages tastes better than store bought with a little practice. Some local establishments make their own sausages which can be very tasty but like smokeamotive said you can adjust flavors to your taste.

It's a lot of fun & gives you a sense of accomplishment, when you do it yourself. Plus as the others have said you can adjust the flavor to suit your own taste and you know what meat is in it.
