It arrived today. The ingredients are chili pepper, salt, cumin, garlic, oregano, silicon dioxide, and ethoxyquin. I guess just add pork and vinegar followed by a thorough mixing.

Most of those ingredients are fairly common in kitchens, although silicon dioxide (flow agent) and ethoxyquin ( a food preservative and a pesticide!) may be a little trickier to find at the local mom & pop grocery store...

If I had seen the ingredients online I wouldn't have ordered it but for $4/lbs I figured why not. From what I could tell the ethoxyquin is actually used to preserve the color. I'll try it and see how it turns out.

I like the chorizo mix form sausage maker

that is what I use, then tweek it with the Rytek recipe.in the book
This is my favorite chorizo recipe at the moment.

5lbs pork
4tsp ground cayenne
5tsp granulated garlic
1tsp Mexican oregano
1tbsp chipotle powder
1tbsp ancho powder
1tsp ground black pepper
2tbsp paprika
3tbsp kosher salt
1cup cider vinegar
 
I would like to see this recipe dry cured in your chamber with cure #2.......
