Well today was my first time ever using a smoker. I recently recieved a wsm for my birthday and couldnt be happier. After some internet browsing i finally lit up the smoker and threw a few chunks of apple wood on and came out with some awesome wings.

The cook started around 1:30. I got the fire started and started making my own rub. By 2 the wings were on the smoker and the temp held steady around 210 to 230. I checked the temp oftenand never had an issue. After a few beers and 2hrs the wings were done according to the recipe i followed i then threw them on the grill fora few minutes on both sides. Mixed in with a glaze i read about and they were ready to eat. I couldnt believe the quality of the wings. I am really happy with the flavor and the fact they are not deepfried.

Well I don't have any pictures from my first official smoke but here are two pictures from my smoke last night and tonight.  I am going away for the weekend and as always eat good when I do.  I originally was only going to smoke one batch of wings but due to the amount of people I decided today during work that I needed to double the dosage of appetizer wings.  The first batch was made with a spicier rub while the second was a bit more mild.  Not sure what I am going to do for sauces yet but am definitely looking to make two different dipping sauces.

I did struggle a bit with my second smoke (the first picture) in the smoker bringing it up to temp.  I am sort of glad this happened tho because I would love to make some jerky and think I have been able to find a way to keep my temps low.  The third smoke (second picture) I had no problems and was able to keep the temps where they needed to be.  Both batches came out great as I tasted them once done.  Can't wait for reactions this weekend.

I so far am having a great time with the WSM and can definitely see wings as a staple in my recipe book.  They are relatively quick and easy.  Can't wait till my next smoke.  Waiting to catch some fresh fish in the spring to really get creative.  Till then I am sure I will branch out a bit.......any suggestions?
