First time--plain old breakfast sausage

Besides smoking and bread I made sausage this weekend for the first time. Nothing special just breakfast sausage. I used collagen casings and a mix (Eastman Outdoors) this time hoping to make it easier for myself. I could not for the life of me figure out how to twist the sausage afterwards to make links so I tied them all (

). We have already had one meal from these and they were pretty good. I can't wait to try making more. I have some hog casings that I need to do something with, just looking for that perfect recipe...

Your sausage links look very good Becky. If you twist every other one 3 twists in the same direction. It is very easy. Some guys twist each one in opposite directions, every other one twisted the same way is much faster.

They will unravel if you cut them immediately after twisting.  Keep them twisted and cook them as a link till they set up and then you can separate them.  Collagen casings do not stay twisted as well as natural casings.  You may also need to fold them onto themselves to keep the twist.
 
Ok, I understand. Thanks. I was just looking over a video about it. Tying was a real aggravation.
 
Great job Becky, they came out fantastic.

I generally use hog casing, so I pinch and fold the casing at the desired length I'm looking for. After a dozen or so links, I go back and twist in the same direction and form a ring. Then I do the process over again.
 
I have got to see some more videos. I just can't get what is going on from a description. I think I will try natural casings next time though.
 
No I won't be sticking with the packaged mix--not that it wasn't good--it was but I like to do things as self sufficiently as possible so I want to try several different recipes.

That's great! Mixes are a great convenience, but I'm a big believer in 'creating your own' as much as possible. It takes a few trial & error episodes with spices and amounts of ingredients, but part of the joy of making homemade links is the "thrill of the unknown" before reaching the final destination.

I just tried the Jimmy Deen! clone recipe from the Len Poli sight and it is very good. I usually use the recipe from Ryteks bbook which i also like but I add a little garlic to both.

I use allot of Ryteks recipes but I have tweaked them to meet my taste. which most of the time is adding half again the seasoning  except for the salt
 
Wow Becky you had a busy weekend. Congrats on all the great things you did.  Ribs, bread and sausage is a lot even for some of us old farts that have been doing it for a while.  

So my guess is that you do embroidery or cross stitch by the looks of what you tied the sausage with. Mrs Scar has won awards for her counted cross-stitch carousel horses.  Am I close?

The collagen casings can be hard to work with.  Try the sheep casings sometime.  They are much easier to work with.

Heck, for breakfast sausage, you don't even need a casing?
