got a 20 lbs turkey put it in brine with tender Quick cure so i don't have to worry about the 4 hour rule .brine for 24 hours .

here im mixing butter and garlic salt to rub under the skin

using my rib rack to help keep the turkey out of the chicken broth. added onion and the turkey neck

on the rack in the pan. I added more of  Jeff's rub to the sides to cover it better. then put it on the smoker at 9AM

I got some "blazin Wings " to deep fry for the game today. going to throw them in the smoker first to see

if I can get some smoke into them.

Looks great, that is quite the feast!

I'm assuming your solo hotdog must be to feed the cook now and hold him over till everything is done?
