Help i made a stupid mistake /the salami turned out good w/Qview

I made a Italian salami today mix all the ingredients stuffed in a casing to discover to my horror that i did not put in the cure #1

i Had no choice just to hot smoke it at 180 til IT 160 cold shower and in to the frigid for the night

is it still safe to eat ? my logic say yes but i don't know.

Bummer! As long as the sausage reached 140 within 4 hours it's safe.

Like they said, as long as it got to 135 in 4 hours it's safe. I'm very curious to see how it will taste.
 
Cooked Salami is a HUGE seller in the States... Cooked Salami and Bologna was a standard in school cafateria's when I was growing up...Everytime I eat one I want to go outside and play!

You hot smoked at 180 i would say you are ok.
 
with Luck  It turned good

today took out from the frigid sliced it it is good and  spicy .
