Yesterday I smoked a 12lb pork butt and a 6 or 8lb chuckie!  With both of these in the smoke and the temp outside dipping to -22C (-7.6F) I knew I was going to be in for a full day.  Here they are when they first went in.  The Chuckie was covered with EVO then a garlic and peppercorn rub.  The pork butt covered with yellow mustard and Jeff's rub

Here they both are pulled.  It was late by the time these were both done so they went into the fridge until today.  The pork I was making to freeze in individual 1lb packages the beef was for dinner today.

I sauted a full chopped onion and tossed in a teaspoon of frozen previously smoked garlic.  Then tossed in the beef made a gravy and just before I served I tossed in the steamed broccoli and served over whole wheat noodles!  Sure tasted great!!!!

Yeah buddy! That looks real good! The chuckie is on my short list, I think I may have to do the same thing and make same dish
