Hey guys I have a question. I have a couple racks of spares on the EECB, they've been on since 1:15, I just checked them and they have some good pull back, looks like 1/4 inch or so. Im not wrapping them and just gonna let them ride out. I was hoping they be done at 7:15 or 7:30, looks like they are about ready now, hope I'm wrong. Also should I rotate the racks. I'm sure the one on the bottom is cooking faster, so I think I should rotate them...help me out guys. 
 
Just make sure they are tender and moist enough for you.  Don't see a reason not to rotate them.  You can always place in an ice chest with towels to keep them warm or remove then and toss on hot grill or oven to warm them up.  Adding a bit of moisture is never a bad thing.

I was hoping they be done at 7:15 or 7:30, looks like they are about ready now, hope I'm wrong.  Depends on your cook temp.  Spares are usually a 6 hour affair, give or take, if you're smoking at 225*ish.  Higher temp, faster cook.  What's your cook temp?  Have you verified your thermometers?

Also should I rotate the racks. I'm sure the one on the bottom is cooking faster, so I think I should rotate them...help me out guys. I usually rotate about 1/2 way through.
 
Sounds like your ECB may be running a little hot no big deal they may just finish little erlier.  Also if your ribs were enhanced ribs I find those pull back a lot sooner.  Eithier way i bet they taste fantastic.

I think they may get done a little soon. They are looking excellent. I bet they taste even better..lol
