Well I took 5 racks of spareribs, rubbed them down and let them sit over night.

I took apple-wood and mesquite wood and have been soaking them over night to fill the smoke box.

I fired up the GSMS to 225 degrees and filled the water pan and put the ribs in.

I'll be spraying the ribs every hour or so with apple juice.

I'm pretty sure I have read everything I could on the forum and am doing everything correctly.

How ever if for SOME or any reason these ribs come out like crap I'm telling my guests that you guys told me to do it this way!

You'll do fine....

Sounds great.  I would not use the mesquite on the turkey though. It's a pretty strong flavor for poultry.

They came out great!!!

I started them at 12 and pulled them off at 7 at 225 to 250 the whole time.

I covered the cooking racks with foil leaving the ends exposed about an inch on each side to let the heat and smoke flow.

After the first 2 hours I used a spray bottle to drench them in apple juice every hour on the hour.

For the last hour and a half I coated each sparerib with some Sweet Baby Rays BBQ Sauce.

That turned into two and a half hours because some of the guests showed up late and I was whacking back captain and cokes!

Once I put the sauce on them I sprayed them with apple juice every half hour.

I cut them up and served them. They loved them!

I asked one of my daughters friends who lives up the street how are the ribs? He stops eating and looks me in the eye and says Mr. K they are beautiful, and just goes back to stuffing his face.

It was worth every minute of reading, learning and prepping!

Thanks for all your help guys and gals, can't wait to try a brisket for the Superbowl!

Ah - Haaaaaa..... A prime example of why I should not have been posting on "new years eve".......  Need I say more.
