Hey everyone!  Just got a Master Forge vetical gas smoker for christmas and need a little help with some smoking basics.  I'm smoking a 3.5lb pork loin that i've applied a rub to last night.  First of all, how lond is that going to take?  Also, I've seen some people put a pan of water in the smoker, Is that what most do?  Should I apply BBQ sauce before, during, or after the smoke?  Not at all?  Thanks on advance.

Time is just an estimate, it needs to get to 145 internal meat temp. Also, I've seen some people put a pan of water in the smoker, Is that what most do? If your smoker has a water pan in it I would put water in it. Should I apply BBQ sauce before, during, or after the smoke?  Not at all?  I don't put sauce on a loin, but if you do I would do it after it's done.Thanks on advance.
