attempt at roast beef for sammiches

This thread here inspired me to try some roast beef for sammiches.

 I don't have a deli slicer so not sure how i'm going to slice it thin.

Since this is just a test for myself all I got was a 2lbs choice beef of eye round roast.  

Marinated it over night with some worcestershire then used a mixture of traeger prime rib rub and sweet rub.

rubbed and ready to go in the fridge for the night

after about 3 hours at around 180-220 it reached internal temp of 135.

tried to save the beef drippings to make an au jus but there weren't any...  oh well

it's now sitting in plastic wrap and foil resting.   now to figure out how to try and slice some of it thin.

just sliced some and tried a little bit and will save the rest for slicing tomorrow.  was pretty good.  i noticed that some of the beef has this like blueish shiny fishscale look to it, what is that?

Great looking roast beef. You are going to have some great sammies with that
 
The blue silver is normally just real rare meat from my experience.  Was the color toward the center?  I like my steaks Blue/Black   outside charred and middle almost raw.  You can always a can of beef bullion to sauteed onion and garlic to make a bit of juice.  If you want it thicker add a bit of Roux or a little cornstarch.

hmm maybe thats what it was, its just weird bc it was shiny.

Now your beef looks good and like Ahron said Nice Knife to. You should look on E-Bay for a good slicer. I got one a while back for lik 25.00 and it works very well.
