I have to do 20 lbs of wings for wife's Christmas party Wednesday.

 Was thinking of adding some cure to the brine, using a variation of tip's brine.

 Anybody ever "cured " wings???

 Going to smoke them and then into Hot oil to crisp up the skin. Toss them in some honey bbq sauce after frying.

Actually the Cure sounds like a cool idea...You ever try an Alabama White BBQ Sauce?...JJ

I made a batch of bama white for the SELA gathering. I love it but the wife wants sweet bbq.
 
this is the one i made. makes 3 1/2 cups

[h3]Ingredients:[/h3]
  • 2 cups mayonnaise
  • 1 cup apple cider vinegar
  • 2 tablespoon lemon juice
  • 3 tablespoons black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne
  • 1/2 tsp dill (optinal)
[h3]Preparation:[/h3]
Mix ingredients together and refrigerate for at least 8 hours before using. Brush lightly over chicken, turkey or pork during the last few minutes of grilling. This barbecue sauce is also great as a dipping sauce so set some aside before you start grilling to serve on the table.

If it is to acidic for your taste you can add a lil honey for sweetness.

 I enjoy it more as a dipping sauce but it is great brushed on in the last 10 min of cooking.

Here Y'all Are...

Bama White Bubba Q Juice

4C Mayo

1C Cider Vinegar

1/2C Honey

2tsp Wht Pepper

1tsp Gran. Garlic

1tsp Gran. Onion

1-2tsp Wasabi Pwd

1tsp Celery Salt

Combine and mix well.

Makes 5 1/2 Cups.

This makes good Coleslaw too...JJ

Bob yours sounds good and Tangy...My Cheffie Daughter Casey would like that!

The wings sound good and I can't wait to see how they come out. I like hearing how your stuff comes out Bob. I also like the white sauce to. I kick mine up a bit. Then I'm on the LSU band wagon with you to Bob. The food better on your wagon anyway. Our son's a BIG bama fan so I'm running Purple and Gold too.

My wife doesn't care for tangy sauce ,hence the honey bbq . Anyone got any idea on how much TQ i need to add to the brine for say 15 lbs of wings for a 5 hr soak. Do i still go buy the 1 Tbsp per lb ??? Never used cure in bird brine before..
