Oh it was still very good just could of pulled it off a little sooner was very happy.I wouldn't fret much about a little over cooked brisket. They can be tricky and every one seems to act a little differently. The great thing about low and slow is that if we are off a bit, it is still pretty darn good stuff.
Now for the baby backs?
